Choc-vanilla goji berry balls
What are goji berries?
Goji berries, also known as wolfberry, are a small, red berry that grow on a shrub that's native to China. Goji berries are grown in northwest regions of China, Tibet and some other parts of Asia. Picked fresh and then dried, goji berries are traditionally consumed as part of the diet in China, added to soups, herbal teas, wine and juice and are also used medicinally in herbal tinctures that are consumed for their health-giving benefits.
Why are goji berries good for you?
This nutrient-dense superfood contains a variety of vitamins and minerals including vitamin C, riboflavin (vitamin B2), zinc, iron, potassium and calcium. Goji berries are also famous for being a great source of antioxidants including beta carotene and zeaxanthin. Antioxidants help to reduce free radicals that can cause damage to the body’s cells. Without good levels of antioxidants in the diet, the body can succumb to the damage caused by free radicals.

Ingredients
- 1 cup pitted dates
- ⅔ cup raw cashews
- ½ cup goji berries
- ¼ cup cacao nibs
- ⅛ cup cacao powder
- 1 teaspoon vanilla extract
- 1 pinch of salt
Instructions
- Soak dates in hot water for 10 minutes, then strain.
- Place all ingredients into a food processor and process until mixture is well combined and sticks together between your fingers. If the mixture is still too crumbly, add 1 teaspoon of warm water and briefly process again. Keep repeating this step as needed until the mixture is adequately sticky.
- Roll 1 heaped tablespoon of mixture between your palms into a ball, and repeat until all the mixture has been used. Store in the fridge.
