Zingy fruit mocktails
Piña Colada
Ingredients
- 2 slices fresh pineapple (if you’d like your mocktail extra thick and icy, you can freeze these beforehand)
- 1 cup pineapple juice
- ½ cup coconut cream
- ½ lime, juiced
- ½ teaspoon coconut sugar (if you’d like a bit of extra sweetness)
- Handful ice cubes
- Slice of pineapple for garnishing
- Slice of lime for garnishing
Instructions
- Place fresh pineapple, pineapple juice, coconut cream, lime juice, coconut sugar and ice cubes into a blender and blend until smooth.
- Pour into your desired mocktail glass and garnish with a slice each of pineapple and lime.
Serves 1
Blood Orange Fizz
Ingredients
- 1½ blood oranges, juiced
- 2 cups sparkling water
- 1 teaspoon vanilla essence
- ½ lime, juiced
- 1 tablespoon runny honey (more if needed)
- Handful ice cubes
- Slice of blood orange for garnishing
Instructions
- Place blood orange juice, sparkling water, vanilla essence, lime juice and honey into a cocktail shaker and shake until the honey is well mixed through.
- Place ice cubes into your desired mocktail glass along with the slice of blood orange, and pour your mocktail over the top.
Serves 1
Caramel Apple Pie
Ingredients
- 2 cups apple cider or kombucha
- ½ teaspoon cinnamon powder
- ½ teaspoon caramel stevia drops
- 2 sprigs of rosemary
- 4 slices of apple
- 1 cup sparkling water
- Cinnamon stick
- Coconut sugar (enough for rimming glass)
Instructions
- Pour apple cider or kombucha, cinnamon powder, caramel stevia drops, a sprig of rosemary and slices of apple into a jug, and let sit for 30 minutes (ensure you leave 1 slice of apple for garnishing).
- Pour the sparkling water into the jug and stir to combine.
- Rim your desired mocktail glass with coconut sugar, and then carefully pour the mocktail into the glass and garnish with a slice of apple, a sprig of rosemary and the cinnamon stick.
